Here is the science behind it: difficult peeling is characteristic of fresh eggs with a relatively low albumen pH, causing the albumen to adhere to the inner shell membrane more strongly than it coheres to itself. In an eggshell: the fresher the egg, the harder to peel! store bought eggs may be easier to peel, but they can arrive to the stores a month after they have been laid and have another month to be sold! It is well worth the effort to peel fresh eggs and get the nutritional value and benefits of eating eggs fresh, so here are some tips to help you achieve the perfect hard boil: 1. Boil your eggs a minute or two longer than you would normally. I like to place my eggs in the water first, bring it to a boil then turn it off and leave it for 12 minutes before draining and cooling them down. 2. Have a bowl of ice ready and place the hard boiled eggs into an ice bath to cool them down completely. For older eggs you can put them into a mason jar with ice and shake them around to loosen them from their shell. 2. Waiting a week or two before boiling your eggs may help. 3. I sometimes will cut the cooled hard boiled egg (shell and all) in half then scoop the egg out with a spoon if they are harder to peel than usual.
